Ingredients (Serves 4)
8 oz extra-wide egg noodles
2 TBSP olive oil or unsalted butter, divided
2 cups diced white onion
12-16 oz fresh cremini mushrooms
3 cloves garlic, minced
¼-½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
½ cup sherry or dry white wine
½ tbsp tamari or coconut aminos
2 tbsp arrowroot or tapioca starch
¼ cup vegetable broth
¼ cup heavy cream
2 tbsp sour cream
2 tbsp chopped chives
2-3 tbsp grated Parmesan
2-3 tbsp crushed crackers or breadcrumbs
¼ tsp crushed red pepper flakes
Instructions
Bring a large pot of water to a boil and cook egg noodles according to package directions (about 8-10 minutes). Drain and set aside.
Heat 1 tbsp olive oil or butter in a large pan over medium-high heat. Add the onion and cook for 4 minutes, then add the mushrooms. Sauté for another 4-5 minutes, stirring occasionally, until mushrooms are golden and tender.
Reduce heat to medium, then add the remaining oil/butter, garlic, thyme, salt, and black pepper. Stir and cook for 30 seconds, until fragrant.
Add the sherry (or wine) and tamari/coconut aminos. Whisk in the arrowroot or tapioca starch, and once thickened, pour in the vegetable broth and heavy cream. Stir well until smooth.
Fold in the cooked pasta and sour cream until everything is coated in the sauce. Taste and adjust seasoning if needed.
Serve hot, topped with chopped chives, Parmesan, breadcrumbs, and red pepper flakes.
