What I’m Eating, Moving & Loving This Week

Hi friend,

We’re deep into summer now, and I don’t know about you, but my body is craving ease, in every way. This week I’ve been leaning into slow meals, lighter movement, and a gentler mindset.

Here’s a little glimpse into what’s been nourishing me lately:

Eating: Creamy Chickpea Avocado Sandwich

Fresh, simple, and so satisfying. This sandwich has been on repeat this summer, especially when I want something cool and filling that doesn’t require much cooking.

It’s a recipe from my Summer Glow Bundle and The Summer Table digital guides, and it’s quickly become a seasonal favorite.

Here’s how to make it:

  • 2 ⅓ cups chickpeas (cooked & rinsed)

  • 1 ⅓ avocado

  • 1 ⅓ tsp lemon juice

  • ⅓ cup parsley, finely chopped

  • 1 ⅓ garlic clove, minced

  • Sea salt & black pepper to taste

→ Mash chickpeas and avocado in a bowl until creamy.
→ Stir in lemon juice, parsley, garlic, salt, and pepper.
→ Toast 8 slices of bread of choice. We like sourdough.
→ Layer arugula and cucumber slices on one side, then top with the chickpea mixture and the second slice of toast.

Tip: Add a sprinkle of dill, cumin, or cayenne for a little flavor twist.
Leftovers? The filling keeps in the fridge for up to 2 days.

It’s creamy, fresh, and has just the right bite, exactly what my body has been asking for in the heat.

Moving: Gentle Evening Walks

Movement this week has been about winding down instead of pushing through. We’ve been going on short evening walks after dinner, just around the block, noticing the flowers still in bloom and how the light lingers a little longer.

These moments bring me back into my body in a way that feels calm, not forced. And that’s been enough.

Loving: A Shift in Mindset

I’ve been doing a lot of reflecting lately on how we think about healing and how that mindset either soothes or stirs up inflammation.

The truth is, when we approach our wellness journey with criticism, urgency, or guilt, we create more stress. More inflammation. More resistance.

But when we meet our bodies with curiosity and compassion, everything starts to shift.

Healing doesn’t have to be loud or perfect.
It can look like choosing a sandwich that makes you feel good.
It can sound like replacing “Why can’t I feel better?” with “What is my body asking for today?”

That shift in mindset is where healing begins.
